Bonda is a typical south Indian recipe, which is very tasty and crispy. If we taste one bonda we can't stop eating bondas thats the magic of bonda. There are various versions of bondas and every state adds a unique flavour to the dish

 1 cup Dosa batter
 ½ cup Chopped onion
 3 Chopped chillies
 ½ cup Chopped curry leaves and coriander leaves
 2 tbsp Chana dal
 1 tbsp Baking soda
 Salt
 Oil

For preparing dosa batter soak two cups of rice and one cup of black gram in water for six hours and then grind it well and let the dosa batter ferment for at least ten hours

Now mix dosa batter with chopped onions, chillies, curry leaves, coriander leaves, chana dal, cooking soda, salt and mix it well.The consistency must be medium consistency.If the consistency is too tick bonda will be harder. If the consistency is too watery bonda will absorb more oil

Take a pan and heat the oil and put spoonfull of dosa batter in the oil. Fry bondas in small batches keep the flame in medium so that the bonda will be crispy and tasty. Flip the bonda to other side after one side becomes golden brown

Let the other side also change its colour to golden brown and then take out the bonda from oil and serve bonda hot

Bondas can be served with either peanut chutney or coconut chutney. If chutney is not available we can even serve with readily available pickle.
