To prepare dosa batter soak two cups of rice and one cup of black gram in water for six hours and then grind it well and let the dosa batter ferment for at least ten hours
To prepare erra karam or red chutney, cut onions into half and grind it in a mixer along with equal quantity of dried red chilies and 3 cloves of garlic. Add salt to taste

Heat dosa pan apply oil/ghee, take a ladle full of dosa batter and smear it in a circular motion so that the Dosa will be thin and crispy. After 20 sec apply erra karma or red chutney evenly on the dosa and sprinkle oil and cook until it turns light brown
